Herron’s Country Fried Chicken…..
For those of you who aren’t familiar with this particular brand of Fast Food Takeaway Outlet let me explain. This Takeaway serves delicious Fried Chicken, not dissimilar to Kentucky Fried Chicken. They also serve a fantastic (calorific) Chicken Sauce. One of my firm favourites was always their Chicken Kebab on Chip. Basically fried chicken in their chicken sauce heaped on chips and boy was it goooood! It was also stodgy and I found I was rarely able to move afterwards…..
Oh boy but this week have I wanted one!
So I had one 😀
Not the Country Fried Chicken Kebab on Chip but my own Syn Free Recreation and it’s so simple I can’t believe I didn’t think of it sooner! It’s already been decided that it will become a frequent flyer in our home!
Syn Free Chicken Kebab on Chip
To be served on top of Syn Free Chips

Ingredients
(based on 2 person serving)
3 Chicken Breasts (chopped)
1/2 an Onion (sliced)
4 Mushrooms (sliced)
1 Knorr Chicken Stock Pot
1/2 Chicken Stock Cube
2 Tablespoons of Fat Free Natural Yogurt
1/2 cup Boiling Water
Black Pepper
FryLight Spray Oil
Method
1. Start frying your sliced onion in some frylight until they start to golden then add your chicken pieces and mushrooms. Fry until the whole mix is cooked through and golden in colour.
2. Crumble your stock cube over the mix, pop in your stock pot and add boiling water, allow to bubble whilst stirring in the stock pot.
3. When the stock pot has completely mixed in reduce to simmer for approximately 4 minutes (add more water if needed) and sprinkle pepper all over mixture.
4. Remove from the heat and stir in your Fat Free Natural Yogurt. You should find you now have quite a creamy looking sauce.
Best served on top of chips!
I layered mine exactly the way they do in Country Fried Chicken: Chips topped with a mixed salad of Lettuce, Spring Onion and Red Onion and your Chicken Sauce Mixture on top – I also added a couple of tablespoons of Extra Light Mayo on top of the whole glorious pile!
The result?! Astoundingly glorious! I swear to you there was a chorus of ”Food, Glorious Food” playing in my head when I tasted it!
And of course I’ll let you know that your Other Half (or if you’re being slightly naughty!) can have a generous helping of cheese on top of it all to get the lovely stodginess of the Takeaway Version and the dish would still work out much lower in syns or calories 😀
