This week brings a brilliant, simple recipe that can be made into a quick lunch or a filling dinner!
Potato Cakes are so versatile and can be whipped up in no time, making them a firm favourite in this household. For all fellow slimming worlders out there, as we all know, potatoes are syn-free 🙂
The recipe I’m posting is a great leftover recipe. For instance I had cooked for my visiting mum, my husband and I a Sunday dinner, the leftover potatoes were sitting lonely in a plastic container…. so the next day I got my creative juices flowing.
Now, these are SO simple to make, I didn’t follow a recipe, I’d never made them before, you cannot go wrong!
Ingredients:
Left over potatos (mashed)
Spring onions (chopped)
Bacon (chopped/diced)
Chives
Basil
Salt and Pepper to season
1 Egg (beaten)
Method:
1) In a frying pan, using a low calorie fry spray, fry off your bacon bits until they’re starting to brown. Remove completely from pan and pop into your mashed potato mix along with your chopped spring onions. Mix well.
2) Season your potato mixture, using basil, chives, salt and pepper – taste at this stage to check flavouring/seasoning.
3) Add your beaten egg to the mix at this stage (1 egg is normally sufficient for 4 potato cakes) Mix well to bind.
4) (this is the gooey part) Using your hands roll sections of the mixture round in the palms of your hands to make a tennis ball shape (you can make smaller if you prefer), then press down with the your top hand to flatten slightly. Voila – uncooked potato cake!
5) Spray both sides of the potato cakes with your spray oil and making sure your frying pan is nice and hot, pop them in!
6) About 4 mins on each side should leave them nice and golden brown in colour – remove from pan and serve with whatever you like – we had baked beans with a nice runny yolked fried egg!
