Chocolate and run tofu mousse

I hope you all enjoyed the recipes I shared last week to celebrate National Vegetarian Week.

The good news is I plan to keep on sharing recipes, product and retailer reviews every week. Yes, you are indeed lucky, lucky people.

So I thought I would start this regular feature off with one of the easiest, virtous AND most decadent pudding recipes I have tried out. Yep there is tofu but there is also fair trade dark chocolate and a generous splishy splashy of rum …

300g silken tofu
200g fairtrade dark chocolate
1 tsp vanilla essence
A very generous splash of dark rum… possibly 2. You can substitute orange juice.

This is ridiculously easy, very rich and a little goes a long way.

Melt the chocolate either in the microwave or in a bowl over a saucepan of simmering water.
Chop up the tofu in the food processor until it looks smooth.
Pour the chocolate into the tofu and pulse until blended.
Mix in the vanilla and rum and spoon into 4 little ramekins.
Chill for a couple of hours. It sets like a thick chocolate gnash, the texture is similar to ice cream. It keeps well for several days in the fridge and can be served with any fruit you have.
A little goes a long way.
