Since retirement, my Dad, (my kids Granda Colin) has got very creative. He makes his own ice creams, jams and pickles. Granda Colin loves tastes, he also tuts at low-fat this and low sugar that. This recipe is not for the diet conscious weight watchers, nor for any who counts calories, syns, or any other term….. It just doesn’t register on Granda Colin’s radar. My Gran, his mum, was a sugar hoarder from the war years….she and my grandad had a fabulous veg garden and fruit garden and a tiny patch of grass for us grandchildren to sit on. Note sit on, not play on…… Seen and not heard, but loved and encouraged to help in a practical way ie fond memories of picking fruit and veg for the table first at my gran and Grandads then at my own home.
We lived “the good life” (70’s sitcom) before the sitcom was invented….. Watching fresh fruit and veg be converted into cordials or prepped for the table was all part of growing up. Mealtimes were family times around the table, there was always “pudding” but only if you ate your dinner up…..
When we have family dinners at my folks, there’s always a break after dinner, then the announcement “ok who wants ice-cream” then we all shout back “I scream, you scream, we all scream for ice-cream” bless us, we are the original “Walton’s” also!! My poor husband is now used to it but it’s all a bit twee for him haha
So I thought I’d share my dads ice-cream recipe. Please note, I’ve never made it I’ve just ate it…..it’s very rich and yummy. I hope it works, my dads a very precise man & these are his instructions; feel free to try it and play around with it til you have what works for you. I’ll not tell him. 😀
Basic recipe
1/2 pint double cream
2 tblsp milk
5 tablesp icing sugar (sifted ie put thru sieve)
1tblsp vanilla essence

Ginger
Fruit
Basic Recipe Instructions (vanilla)
Put glass mixing bowl in freezer to chill first (about 5-10 mins)
(this is important to aid process)
1/ take cream and milk whip until partially stiff
2/ sift in icing sugar and keep stirring
3/ add in vanilla essence
4/mix well together and transfer into a Tupperware box (large sandwich lunch box size)
5/ freeze for 45 mins to an hour
6/ remove from freezer, fork thru mixture so the more solid outside is mixed with the more liquidy middle and refreeze.
7/ will be ready in a further 45 mins or as and when you need it
8/ serve in cubes or sliver sliced straight from the Tupperware box. Decorate or serve plain
[this is a very creamy rich dessert, a little portion will suffice]
Variations
i/ ginger
1/ make basic recipe but use one less tblsp icing sugar and no vanilla essence
2/ after first freeze and forking thru stage add 1.5 ounces (approx) finely chopped ginger and I tblsp syrup it came in, fork it in thoroughly and refreeze for 45 mins, remove and fork thru a third time then refreeze for a further 30 Mins then serve straight from freezer
{granda Colin uses stemmed ginger in syrup……if you are using crystallised ginger you may have to play around with amts}
[NB the syrup makes it very sweet so I liked melted plain 70% chocolate to balance the tastes…..]
ii/ fruit
As above variations recipe and stirring in finely chopped fruit at stage 2
favourites for me are strawberry, blackberry and oohhh wonder if melon would work 😀
{granda Colin suggested the use of fruit in syrup, but was also swayed by the idea of using fresh or fresh frozen}

iii/ flavours
using the basic recipe and substituting coffee/amaretto/hazelnut/caramel flavouring instead of the vanilla
Decorations
With the basic recipe you can serve plain, or with fresh fruit, chocolate or other sauces, with the variations a complimentary sauce or a fresh version of the fruit chosen within. I can also imagine lil scoops of two or more flavours would also make a tasty treat. That or just open the Tupperware spoon and dive on in 😀
As you can see the basic recipe is open to whatever your heart desires. You can substitute cream for a low fat version and play around with sweetness. What I would say is try it before you change it……..you can always jog on the spot whilst whipping up a storm in the kitchen heehee
