Belly Warming Chilli

It would appear that any chance we had of ‘good weather’ is well and truely behind us. That can only mean one thing! Time to bring out the Slow Cooker and the one pot wonders 🙂

I love this time of year, the snap in the air, the smokey smell from chimney’s it is all just cosy. Well, when you’re inside nice and warm it’s cosy!

This weeks recipe is for my husbands Chilli. Yes, my husbands! Don’t worry I’ve checked with him and he has given his full permission for me to share this one. Try as I might, I cannot make a chilli as nice! Maybe it’s a knack? Who knows!

Ingredients

1 500g carton of passata

500g extra lean beef mince

1/2 onion

1 red pepper

1 yellow pepper

10 mushrooms

4 garlic cloves

1 chilli

(we like a nice chunky chilli in this house but you can take away and add as you please)

3 heaped tsp chilli powder

1 tsp cumin

3 tsp oregano

2 tsp cayenne

Salt and Pepper to season

Method

1. In a hot saucepan fry your onions until ever so slightly golden, add the extra lean mince and brown through (drain your meat and return to pan).

2. Then add the peppers, chopped chillis and garlic and let cook for about 5 minutes.

3. Cover chilli mixture with passata, stir through and heat and then add all your herbs and spices: oregano, chilli powder, cumin, cayenne and stir well.

4. Add mushrooms and stir through (if you’re having kidney beans now is the point to add them – I can’t stand them personally)

5. Leave to simmer for 35-40 minutes and in the meantime pop your rice on to boil!

6. After 35-40 minutes, taste the chilli (careful not to burn your mouth!) and add salt / pepper to taste.

Serve with Rice / Chips or Both!

This recipe is Syn Free in Slimming World terms and is a firm favourite in this house! This particular recipe is enough for at least 4 generous servings. Normally does my husband and I two nights dinner so it’s great on a budget 🙂

Needless to say the husband recommends that you enjoy it with some Tortilla Chips, cheese on top and a cold beer however my fellow slimming worlders? Why not try some of my amazing Garlic Yogurt on top instead, it tastes very luxurious!

So so simple to make: Roast some garlic cloves in the oven for approximately 15 minutes. In a food processor blend the garlic cloves with some low fat natural yogurt, add a dash of salt and pepper and drizzle over the chilli – DIVINE!

  1. Sounds a great chilli …a little hot for me but I could mild it down …ok I’m a woose (is that how you spell it??) …and I love the idea of the garlic yogart

    • Hiya Angie, you can easily mild it down by using only half a chilli and mild chilli powder and the yogurt brings a lovely coolness to it! I’m a bit of a ‘wuss’ (lol) too!

  2. 2 tsp cayenne? My god- I might add 2 pinches!! Am amazed you lived to tell the tale (recipe)
    I make mine very similar but also add some cinamon- is very good in it, beef stock and a little shake of the lea and perrins
    I also add the kidney beans and some sweetcorn if I have any opened.
    I used to make chilli using the sachets of seasoning, but can honestly say the slimming world one is so much tastier- love it x
