National Vegetarian Week 2013 – Day Six

Super Quick Mixed Berry Crumble

This is a super easy recipe and can be thrown together quickly and easily when you are in need of a sweet treat.
The crumble topping recipe is estimated because having made this for so long I don’t really measure it as such. Your topping wants to be like moist breadcrumbs and if in doubt go for more fat not less. I love adding oats to my crumble but you can simply use more flour if you don’t like oats. Seeds are also optional.

Ingrediants
500g mixed frozen summer berries
3oz chilled unsalted butter cut into cubes
3oz caster sugar
3oz plain flour
2 large tablespoons of mixed seeds

Preheat the oven to 200 degrees or gas mark 6.
Pour the fruit into the casserole dish and sprinkle a heaped tablespoon of sugar over the fruit.

In a bowl rub the butter into the flour until they mixture resembles breadcrumbs then stir in the oats, flour and seeds if using.
I have small children and they don’t like spotting anything unexpected in their food so I make my mixture in a food processor so the oats and seeds are finer in texture and harder to spot.

Put the crumble on the fruit and put it in the oven and cook for around 30 minutes or until the crumble is crisp and golden.
