How to make Morrocan Tortilla

Morrocan Tortilla

Today I am going to teach you how to make some delicious Morrocan Tortilla. This is a simple and delicious appetizer called Morrocan Tortilla, this dish is originally from Spain and it is made of eggs, potatoes and onions however in Morroco they add some more cumin and parsley.

List of ingredients

4 potatoes

1 small onion

5 eggs

100 grams of parsley

100 ml of olive oil

½ teaspoon of paprika

¼ teaspoon of cumin

1 teaspoon of salt

¼ teaspoon of pepper

Start by peeling the potatoes and cutting them into really small cubes. The first step is to cook the onions.

On medium heat drizzle half of the olive oil in your pan, add the onion, a pinch of salt to the onion, let the onion cook for the next five minutes. After five minutes add the potatoes to the pan, the spices and the rest of the olive oil.

Make sure you give it a really good stir and cover the potatoes and let the cook on medium heat until done, make sure to stir from time to time.

To check if your potatoes are done you can easily taste them or try to cut them with a fork, they should cut easily. When the potatoes are almost cooked, add some parsley and let them cook for another few minutes.

After a few minutes make sure to transfer the potatoes to a separate bowl, the next step is the most important.

Next, you need to cook the eggs with the potatoes. Start by thoroughly beating the five eggs, than add the eggs to the potatoes.

The last step is to return the mixture to the pan and cook it on medium heat on both sides, make sure to shake your pan if you want your mixture to cook evenly.

When the edges start cooking, gently push them inside. In the end put a plate over the tortilla and flip it, slide the tortilla back in the pan and cook the tortilla on the other side.

Make sure to push the edges from the tortilla in the inside, this is really important because it prevents the edges from sticking to the bottom of the pan.

Finally, serve the tortilla immediately, my best advice is to serve it with some Berry Bros. & Rudd Champagne Blanc de Blanc NV as it has proper sour, proper fruit. It has smooth bubble and good afternotes. You can also try some Kenzo Estate Murasaki 2008, it has a well controlled sweetness, good blend of Cabernet Sauvignon and Franc, a little bit Petit Verdot.
